Chicken & Dumplings

Feeds 12 people Crowd pleasing meal!

Ingredients

  1. 3.5 lbs of skinless chicken breast or 5 breast (not frozen)
  2. 1 large can of cream of chicken soup
  3. 2 cups of water
  4. chopped onion & celery
  5. seasonings (salt, pepper, garlic powder, garlic salt, Mrs. Dash)
  6. 15-20 tortillas

Directions

place chicken breast in Crock Pot, pour cream soup on top of chicken, add water, add seasonings, add chopped onion & celery.

put on low for 8 hours or high for 6 hours

the last 10 minutes before serving take 10-20 tortillas and cut them into medium pieces and place in crock pot, make sure the liquid covers the tortillas. The tortillas will expand and look like dumplings. I put a fork in the chicken and pull the chicken a part as it will look like shredded chicken. Serve up for a quick and easy meal!

Hamburger Potato Casserole

Ingredients

  1. 2lbs of ground meat
  2. 26 oz Cream of Mushroom soup (large can)
  3. 1 small bag of frozen green beans or 1 medium can of green beans
  4. 1 bag of hashbrowns frozen

Directions

  1. brown hamburger meat with salt, pepper, and what seasonings you use.
  2. add cream of mushroom soup and stir together. If it looks too thick just add a tablespoon or 2 of milk.
  3. spray inside of crock-pot with cooking spray
  4. place frozen hashbrowns in bottom.
  5. put green beans on top of hashbrowns and if you are using can then drain the water
  6. place hamburger meat mixture on top.
  7. cook on low for 6-8 hours

Lemon Butter Garlic Chicken

Ingredients

  1. 3-6 lbs of chicken
  2. 5 tablespoons of garlic in jar or fresh and minced
  3. 3 tablespoons of lemon juice fresh squeezed or from jar.
  4. 1 stick of butter
  5. seasonings ( salt, pepper, garlic salt, garlic powder, Mrs. Dash)

Directions

1. Cut chicken into 3 long lengths

2. put 1 stick of butter in Presto or skillet and let melt

3. place chicken in Presto or skillet and put spices on

4. sprinkle garlic on each chicken slice

5. let cook on each side for 5-10 minutes and then flip chicken over and cook on other side 5-10 minutes

Mexican Soft Tacos

Ingredients

1. Chicken, beef or any leftover meat.

2. 1 packet of taco seasoning mix

3. Olive oil

4. Tortillas

5. 1 Bell pepper any color

6. Cilantro

7. 3 Red Cherry tomatoes

Directions

1. Add 2 tbsp. olive oil to skillet

2. Add meat

3. Chop cilantro and add, this is up to you how much to add.

4. Add the packet of Taco seasoning.

5. Cut the Bell pepper into pieces and add to the skillet

6. Cut the tomatoes in half and add to meat mixture

sautee all the ingredients in the skillet for about 5-7 minutes or at least until the Bell peppers are limp.

7. wrap the meat mixture in the tortilla and serve with salsa, sour cream, shredded cheese, avocado and enjoy! We also serve with warm cheese dip:)












BLT'S

Ingredients

  1. 1 loaf of bread
  2. 1 package of bacon turkey or pork
  3. 1-2 tomatoes
  4. slices of cheese ( I use the large slices from deli -provolone)
  5. Mayonnaise
  6. Lettuce (Iceberg, Romaine, or Bibb)
  7. deli meat (optional)

Directions

  1. Cook the bacon in a skillet. We use an iron skillet for this
  2. toast your bread
  3. put mayo on both sides of the bread
  4. layer with bacon , lettuce, tomato slices (you can add deli sliced meat)
  5. add the cheese slices ( also optional)
  6. add a little salt and pepper to taste
  7. place sandwich together and cut into slices

My Hubby's Crock-Pot Famous Chili

Ingredients

  1. 5 lbs. of hamburger meat
  2. 2 jalapeno peppers
  3. 3 large cans of whole tomatoes
  4. 1 can of kidney beans
  5. 1 can of Northern beans
  6. 1 can of light Kidney beans
  7. 1 can of Pinto beans
  8. 1 onion
  9. 1 large can of tomato paste
  10. 1 green bell pepper

Directions

  1. Cook hamburger meat and drain then add to the crock-pot.
  2. Drain all beans and add.
  3. Dice onion, jalapeno pepper, and green Bell pepper and add to the mixture.
  4. Open all cans of tomatoes and drain and then blend until liquid.
  5. Add tomato paste
  6. Blend really well in Crock-Pot and then cook on low for 6-8 hrs.

Spaghetti

This is probably one of the biggest go to meals in any family:)


Ingredients

  1. 3- 5 lbs. of hamburger meat
  2. 1 onion
  3. Garlic minced or from the jar
  4. 2 -24 oz. spaghetti sauce
  5. salt, pepper, garlic powder, garlic salt, Mrs. Dash, Italian seasonings
  6. 12-24 oz. of spaghetti or linguini noodle

Directions

  1. Cook hamburger meat until browned.
  2. Dice onion and garlic and add to meat mixture while cooking.
  3. Add all seasonings
  4. After meat mixture is cooked drain any grease
  5. Add meat mixture back to pan and add the spaghetti sauces. Let meat stay on warm for 5 min.
  6. Cook spaghetti noodles. I will start my noodles while the meat is simmering.


I also like to serve this dish with garlic bread. I buy garlic bread frozen sometimes or I make my own. Just put bread on a cookie sheet and cover in butter and garlic powder and bake at 350 degrees for 5 min.

Ritzy Chicken Casserole

Ingredients

  1. 4 cups of cooked chicken cut up or shredded.
  2. 4 sleeves of Ritz crackers
  3. 1 stick of butter
  4. 1 cup of chicken broth ( can be used from cooking the chicken)
  5. 1 cup of sour cream
  6. 1 large can of cream of chicken soup
  7. salt and pepper

Directions

  1. Melt 1 stick of butter
  2. Crush all 4 sleeves of Ritz crackers ( crush them with your hands)
  3. Pour melted butter over crackers and mix ( use a potato masher or fork to mix)
  4. take 1/2 the cracker mixture and spread in a 9 x 13 dish.
  5. Place cut up cooked chicken over crackers.
  6. Then mix sour cream, cream soup mixture, and chicken broth.
  7. Pour mixture over chicken
  8. Sprinkle remaining cracker mixture over the creamy mixture.
  9. Bake at 350 degrees for 40 min.

Shepherds Pie

Ingredients

  1. 3-4 cups of cooked ground beef
  2. 1 large can of cream of mushroom soup
  3. 1/2 cup of diced onions
  4. 2 cans of mixed veggies or 2 cups frozen veggies
  5. 1/2 cup of milk
  6. 3- 4 cups of cooked mashed potatoes or instant mashed potatoes prepared(use the seasonings that your family likes for mashed potatoes)
  7. 1 cup of cheese (optional)

Directions

  1. Spray a 9 x 13 dish
  2. Spread mashed potatoes
  3. Mix the veggies with the meat
  4. Mix diced onions in with veggie and meat
  5. Mix cream of mushroom soup and milk and pour into meat mixture
  6. spread all contents on top of the mashed potatoes
  7. Add salt and pepper to taste
  8. Add cheese on top (optional)
  9. Cover and bake at 350 degrees for 45 min. Remove cover at the last 10 min of cooking.

Chicken Pot Pie

Ingredients

  1. 3-4 cups of cut cooked chicken
  2. 1 26oz. can of Cream of Chicken soup
  3. 1 cup of chicken broth
  4. 2 cups of mixed veggies can or frozen
  5. 1 pie crust or homemade pie crust (recipe included)
  6. salt and pepper

Directions

  1. In a sauce pan combine soup and chicken broth and bring to a boil
  2. Allow soup mixture to come to a simmer and add the veggies. Let veggies simmer in soup mixture for about 5 min.
  3. Now add cooked chicken to the veggie and soup mixture and add salt and pepper
  4. Turn mixture off
  5. Take a 13 x 9 casserole dish and spray
  6. Add meat, soup and veggie mixture to the dish.
  7. If you have pie crust you can cut in long narrow pieces and lay on the mixture.

Homemade Crust

2 cups of self-rising flour

1/4 cup of milk

1/2 cup of softened butter

Mix with a fork, the mixture should be a doughy consistency and sticky to the touch. If too dry you can add a pinch of milk. If too wet add a pinch of self-rising flour.

Next, put 1/2 cup of self-rising flour on your counter.

Then, take dough and put on top of the flour you just put on your counter top.

Next, take a roller and begin to roll out the dough. If dough sticks to the roller rub the roller with self-rising flour.

Lastly, pick dough up and lay on top of mixture. Take your fork and put a few holes in the dough.

Bake at 350 degrees for 35-40 min. or until the crust is light brown or golden brown.
